Day-to-day operating brief
What Catering Manager work looks like in practice
A School Catering Manager leads meal production and service within a school timetable. Terms should identify kitchens, pupil numbers, menus, dietary and allergen controls, staff rotas, deliveries, stock, budgets, cleaning, equipment, free-school-meal administration boundaries, safeguarding and liaison with school leaders or an external catering provider. Meal planning also has to reconcile nutrition expectations, kitchen capacity, delivery reliability and the time available for service between lessons. A special diet should remain traceable from current information supplied to the school through recipe, preparation and counter handover. Near misses involving allergens or temperature control require review even when no pupil becomes unwell. Supplier changes, recalls and unavailable ingredients need an immediate link to affected recipes and service locations. Staffing plans should identify who can lead cooking, verify dietary meals and close the kitchen, rather than counting every catering employee as interchangeable during absence.
Individually written and reviewed against the maintained role record.
